Wedding Rehearsal Dinner

A few weeks ago, a friend asked me to cook for her wedding rehearsal dinner.  This was the first event I’d ever done, and it went very well, with lots of food for the families to take home.  Cooking all of this for 50 people was a great experience, and definitely more work than I had anticipated, but luckily I had two wonderful kitchen angels helping me the day of the dinner.  I did a combination of Ayurvedic and not so Ayurvedic foods (mostly the desserts), using 100% Organic ingredients, as local as possible.  Here is the menu:

Water Infusions:

  • Elderberry and Mint
  • Hibiscus and Orange
  • Cucumber, Lemon and Dill

Appetizers:

  • Hummus
  • Spiced Hummus
  • Date Ginger Chutney
  • Veggie platter
  • Sweet Chapati (cinnamon, nutmeg and coconut)
  • Savory Chapati (fennel seeds, cumin seeds, ajwain seeds and coconut)

Main Dishes:

  • Barley with cardamom and parsley
  • Black eyed peas with cumin and coriander
  • Sweet potatoes and yams with coconut and cinnamon
  • Kale with red cabbage and cashews

Desserts:

  • Medjool dates stuffed with almond butter and cinnamon
  • Vanilla Macaroons
  • Chocolate Macaroons
  • Minted Macaroons
  • Lemon-Lavender Macaroons
